As most of you know, breakfast is my fave. And açái bowls are one of my go-to’s. I usually eat them on the weekend so I can chill at home and not take it to go while I’m rushing out the door.
I’ve been experimenting with different ingredients and found myself making a green-inspired one (maybe because I’m on such a matcha kick I’m just drawn to green right now?) This one features spirulina.
Spirulina is a blue-green algae that has so many benefits. Considered a superfood and ‘miracle of the sea,’ it is packed with protein (like 70% of it is protein!), B vitamins, iron, and magnesium. It does taste a little like sea weed in my opinion, but you get used to the taste the more you eat it. I like to pair it with with sweeter foods (like fruits) to help balance out the potent taste.

Spirulina Açái Bowl
1 tsp Spirulina
2 packets Sambazon açái
1 banana (save 1/2 for topping)
1 C frozen riced cauliflower
2 C coconut milk
Place all ingredients into a blender and blend on high until you’ve reached the desired consistency. Modify by adding in more coconut milk or water if you want it thinner, or add in a fat like coconut milk, almond butter, or avocado if you want it thicker or creamer. Pour it into a bowl and top with your likings: the other half of your banana, chia and/or flax seeds, shredded coconut, cinnamon, and any other berries, nuts, or granola.
