Fall is here, which means pumpkin everything 🎃
New England in the Fall is my favorite time of year. The weather is crisp, the sun is still beaming, the foliage is changing, there’s pumpkin spice, apple crisp, it’s football season, and the wardrobe is simply the best.
Plus pumpkins are everywhere! And any opportunity I have to eat, drink, bathe in pumpkin I will – I love the flavor, the aroma, the texture. It’s definitely in my top 3 favorites.
This morning I was craving something warm and nourishing. Since the weather is changing and getting chillier, I prefer warmer foods rather than my normal smoothies. So I intuitively through stuff together in a pan, only to realize that I was making one of my go-to’s for warm-comforting-breakfast: non-oats oatmeal.
It’s loaded with healthy fats, protein, and fiber (quite a bit actually). Ready in less than 10 mins, gluten-, grain-, and dairy- free, and can easily be pre-mixed to quickly heat up the next day. My type of breakfast 👌🏻
Pumpkin Non-oats Oatmeal:
- 1 tsp coconut oil
- 2 tbsp ground flax seed
- 2 tbsp chia seeds
- 1 tsp pumpkin pie spice
- Dash cinnamon (or a lot if you’re like me 😉)
- 2 heaping tbsp pumpkin purée
- 1/2 c coconut milk (add more for desired consistency)
- 1/4 apple, diced
- Optional add ins:
In a medium sized pan add 1 tsp coconut oil until melted. Add all of the ingredients, and stir all together on medium heat until all the liquid is dissolved. It will come out thick & creamy, but play around with adding more liquid if you want it less thick.
Optional toppings: walnuts, pumpkin seeds, nut butter
