Warming non-oats Oatmeal
This is one of my go-to’s lately. I’m actually obsessed.
Since we’re in the midst of winter I’ve been experimenting with some breakfast options, including this non-oats oatmeal inspired by my fave Kelly Leveque of Be Well by Kelly. This breakfast is packed with protein, fiber, and fat and is super quick and easy to make (it really takes a whole 5 minutes to make). And keeps me feelin’ satiated, warm and cozy for hours. It’s kind of my new comfort food during these chilly winter days.
Non-oats Oatmeal Recipe
1 serving hemp seeds (~3 tbsp)
1 serving chia seeds (~1 tbsp)
1 serving of plant based protein powder
1 tbsp of almond butter
1 tbsp of coconut oil
1 C of almond milk
In a medium pan add coconut oil until melted. Add almond milk and bring to a sizzle. Add the protein poweder, chia seeds, hemp seeds, and almond butter and whisk together until desired consistency (it will thicken). Then add some fruit (optional) like fresh or frozen mixed berries or bananas, and some spices like cinnamon and tumeric, whatever you like. Top with your favorites like cacao nibs and shredded coconut and you’re golden!
