Guysss these balls are life
Seriously… packed with clean, nutritious ingredients, protein, and healthy fats, these Maca Cacao Energy Balls keep you energized, full, and satiated for hours. They’re the perfect snack to grab-n-go, an afternoon pick-me-up, or a night-time cap. Sometimes I eat them before I teach early in the morning to hold me over until I can have a full meal, or I break them up and sprinkle them over my smoothie bowls, or I indulge for a bedtime dessert. No matter what, they’re delicious and nutritious, at pretty much any time of day.
Maca – an ancient cruciferous vegetable found in Peru, it’s highly nutritious and provides energy, stamina, mental clarity, and even strengthens the libido (hell yeah). I think it tastes kinda earthy, spicy and nutty. Plus, it’s also an adaptogen
Cacao – aka the real chocolate. It’s considered a superfood, and is packed with antioxidants, iron, nutrients, and minerals, and helps balance energy and stress levels
Cashews – it’s no secret that nuts are one of the healthiest fats we could eat. Cashews contain monounsaturated fats, which help lower LDL cholesterol (the “bad” cholesterol) and can even help manage blood sugar levels.
Recipe below, but definitely get creative with your ingredients and texture to create something you really enjoy.
Yields about 12-15 balls:
2 tbsp maca powder
2 tsp cacao powder
1 serving of chocolate protein powder
1 tbsp sunflower butter
1 cups of raw cashews
2 tbsp flax seeds
2 tbsp shredded coconut
Water as needed
Mix all ingredients into a food processor (or a blender) except water. Blend until smooth adding in 1 teaspoon of water as needed to reach desired texture. The mixture should form into a dough ball. Scoop out 1 spoonful of mixture and roll into a ball. Place on a freezer-friendly dish, and pop them in the freezer for at least 30 minutes. Take out of freezer at least 30 minutes before enjoying. (tip: you could microwave them if you want them warmer or to enjoy sooner)
