These may be too good to be true…
I stumbled upon this recipe from @jcookingforhealth and instantly made it. It sounded too good to be true. And it was. I ate 5 out of the 7 cookies in one sitting 🤦🏻♀️
They bake perfectly – a little crispy on the outside, soft on the inside…
They also taste juuust sweet enough – the banana and vanilla coconut add the perfect amount of sweetness to satisfy my sweet tooth, without totally spiking my blood sugar.
The biggest win?
They’re made with REAL ingredients, including collagen – the protein responsible for our skin, hair, and nails.
8 ingredients. 5 minutes to prep. 15 minutes to bake. 2 minutes to devour.
- 1 ripe banana, mashed
- 1 C almond flour *** AFFILIATE
- 2 scoops vanilla protein powder (I used Primal Kitchen’s Vanilla Coconut Collagen Fuel, it was perfect)
- 1/3 C tahini
- 1/2 tsp baking powder
- 1 tbsp coconut oil, melted
- 2 tbsp almond butter
- Handful of cacao nibs (or chocolate chips)
Preheat oven to 375 degrees. Spoon or ice cream scoop the dough and place on a parchment lined baking sheet. Bake for 15 minutes. Let cool for a few minutes and then dig in.
